Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, sugar, baking soda, cinnamon, nutmeg, and salt until combined.
  3. In another bowl, whisk eggs and oil together. Gradually add the wet mixture to the dry ingredients until just combined.
  4. Fold in the grated carrots gently.
  5. Drop rounded tablespoons of batter onto prepared baking sheets about two inches apart.
  6. Bake for 12-15 minutes or until golden brown. Allow to cool completely on wire racks.
  7. For the filling, beat cream cheese with powdered sugar and vanilla until fluffy. Spread between two cooled cake rounds.
