  • 2 lbs Yukon Gold potatoes, thinly sliced
  • 2 large sweet onions (Vidalia or Walla Walla), thinly sliced
  • 1 ½ cups Gruyère cheese, shredded
  • 2 cups heavy cream
  • 4 tbsp butter
  • 2 tsp fresh thyme, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, melt butter. Add sliced onions and sauté until golden brown and caramelized (about 15 minutes).
  3. In a greased baking dish, layer half of the sliced potatoes; season with salt and pepper. Top with half of the caramelized onions and half of the Gruyère cheese. Repeat layers.
  4. Pour heavy cream evenly over layered ingredients, then cover with foil.
  5. Bake for 45 minutes until potatoes are tender. Remove foil for the last 15 minutes to achieve a golden top.
