  • 1/2 cup crushed candy canes
  • 2 cups vanilla or peppermint ice cream

Instructions

  1. Preheat oven to 350°F (175°C). In a large bowl, cream together butter and sugars until fluffy. Add the egg and mix well. Stir in vanilla extract.
  2. In a separate bowl, whisk together flour and baking soda. Gradually add to the wet ingredients until just combined. Fold in crushed candy canes.
  3. Scoop rounded balls of dough onto lined baking sheets, spaced apart. Bake for 10-12 minutes until edges are golden but centers remain soft.
  4. Cool for 5 minutes on the baking sheet before transferring to wire racks to cool completely.
  5. Once cooled, scoop ice cream onto one cookie, top with another cookie to create a sandwich. Roll edges in more crushed candy canes if desired.
