  • 2 cups granulated sugar
  • 1 cup brown sugar
  • 3 large eggs
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 cup chopped pistachios
  • 8 oz cream cheese (softened)
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. Melt butter in a large bowl; whisk in granulated and brown sugars until smooth. Add eggs one at a time, mixing well.
  3. In another bowl, combine flour and cocoa powder. Gradually add to the wet mixture, mixing until just combined.
  4. Fold in chopped pistachios.
  5. In a separate bowl, beat cream cheese with vanilla extract and one egg until smooth.
  6. Spread half of the brownie batter into the baking dish. Dollop cheesecake mixture on top, then pour remaining brownie batter over it and swirl gently.
  7. Bake for 30-35 minutes or until a toothpick comes out clean (some gooey bits are okay). Allow to cool before slicing.
