  • 1 ½ cups graham cracker crumbs
  • ¾ cup granulated sugar (¼ cup for crust, ½ cup for filling)

  • ½ cup unsalted butter, melted
  • 16 oz cream cheese (2 packages)
  • 1 cup sour cream
  • 1 tsp vanilla extract
  • 2 large eggs

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a bowl, combine graham cracker crumbs, ¼ cup sugar, cinnamon, and melted butter. Press into the bottom of a greased springform pan.
  3. In another bowl, beat cream cheese until smooth. Add sour cream, vanilla extract, and remaining sugar; mix until fluffy. Beat in eggs one at a time.
  4. Pour the cheesecake filling over the crust and smooth the top. Bake for 55-60 minutes until set but slightly jiggly.
  5. Allow to cool on a wire rack for one hour before chilling in the fridge for at least four hours.
  6. Before serving, dust with cinnamon sugar.
