  • 6 large croissants, torn into pieces
  • 1 cup cremini mushrooms, sliced
  • 1 cup Gruyère cheese, grated
  • 4 large eggs
  • 1 cup whole milk
  • 1 medium yellow onion, diced
  • 1 tsp fresh thyme (or ½ tsp dried thyme)
  • Salt and pepper to taste
  • 2 tbsp butter for sautéing

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In a skillet over medium heat, melt butter. Add diced onions and sliced mushrooms; sauté until onions are translucent.
  3. In a bowl, whisk together eggs, milk, thyme, salt, and pepper.
  4. Layer half of the torn croissants in the baking dish. Pour half of the egg mixture over them, followed by sautéed vegetables and half of the Gruyère cheese.
  5. Repeat layering with remaining croissants, egg mixture, and top with remaining cheese.
  6. Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 15-20 minutes until golden brown.
