  • 9 lasagna noodles
  • 1 cup ricotta cheese (whole milk)
  • 1 cup shredded mozzarella cheese (divided)
  • ½ cup grated Parmesan cheese
  • 1 cup heavy cream
  • 2 cloves garlic (minced)
  • 2 cups fresh spinach (sautéed)
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Cook the lasagna noodles according to package instructions until al dente; drain and lay flat on parchment paper.
  2. Sauté minced garlic in olive oil, then add sautéed spinach until wilted.
  3. In a bowl, mix ricotta, half the mozzarella, sautéed spinach, Italian seasoning, salt, and pepper.
  4. Spread filling onto each noodle and roll tightly.
  5. For the sauce, heat heavy cream with remaining mozzarella and Parmesan until melted; season with salt and pepper.
  6. Preheat oven to 375°F (190°C). Pour half the sauce into a baking dish, arrange rolls seam-side down, cover with remaining sauce and foil. Bake for 25 minutes; uncover and bake an additional 10 minutes.
