Ingredients

Scale
  • 1 ½ cups graham cracker crumbs
  • ½ cup unsweetened cocoa powder
  • ¾ cup granulated sugar
  • ½ cup unsalted butter, melted
  • 24 oz full-fat cream cheese, softened
  • 1 cup sour cream (or Greek yogurt)
  • 3 large eggs (room temperature)
  • 1 tsp mint extract
  • 1 cup dark chocolate chips

Instructions

  1. Preheat oven to 325°F (163°C). In a bowl, combine graham cracker crumbs, melted butter, and sugar. Press into the bottom of a springform pan and bake for 10 minutes.
  2. Beat cream cheese until smooth; gradually add sugar until fluffy. Mix in sour cream and eggs one at a time until fully combined.
  3. Divide batter into two bowls—mix one with cocoa powder and chocolate chips, and add mint extract to the other.
  4. Pour dollops of both batters onto the crust and swirl gently with a knife.
  5. Bake for 55–60 minutes until set but slightly jiggly in the center. Cool gradually with the oven door cracked open, then refrigerate for at least four hours before serving.
