  • 4 cups Yukon Gold potatoes, thinly sliced
  • 1 medium onion, finely chopped
  • 1 cup sharp cheddar cheese, shredded
  • 1 can (10.5 oz) low-sodium cream of mushroom soup
  • 1 tsp garlic powder
  • 2 cups mixed vegetables (frozen peas and carrots)

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a large baking dish.
  2. In a skillet over medium heat, brown the ground beef with onions until fully cooked. Drain excess fat and stir in garlic powder.
  3. In a bowl, mix cooked beef with cream of mushroom soup, mixed vegetables, and half of the cheddar cheese.
  4. Layer half of the potato slices in the baking dish, pour the beef mixture on top, and cover with remaining potato slices.
  5. Cover with foil and bake for about 45 minutes. Remove foil, sprinkle remaining cheese on top, and bake for an additional 15 minutes until golden brown.
  6. Let cool slightly before serving.
