  • 1 can (15 oz) sweet corn, drained
  • 1 medium red bell pepper, diced
  • 3 green onions, chopped
  • 1 cup mayonnaise
  • 1 packet (1 oz) ranch dressing mix
  • 2 cups Fritos corn chips
  • 1 cup shredded sharp cheddar cheese

Instructions

  1. Drain and rinse the canned corn under cold water. Dice the red bell pepper and chop the green onions.
  2. In a large mixing bowl, combine the corn, diced bell pepper, chopped green onions, mayonnaise, and ranch dressing mix. Stir until well mixed.
  3. Crush half of the Fritos in a ziplock bag and fold them gently into the salad mixture along with half of the shredded cheese.
  4. Cover and chill in the refrigerator for at least one hour to let flavors meld.
  5. Just before serving, top with remaining Fritos and cheese for added crunch.
