  • 6 soft whole wheat slider buns
  • 2 cups shredded green cabbage

  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced

Instructions

  1. Prepare the jackfruit by shredding it with fingers or forks until it resembles pulled meat.
  2. In a skillet, heat olive oil over medium heat. Sauté diced onion until translucent (about 5 minutes), then add minced garlic.
  3. Add the shredded jackfruit and BBQ sauce to the skillet. Cook for 10-15 minutes, stirring occasionally until heated through.
  4. Meanwhile, mix shredded cabbage, cranberries, apple cider vinegar, salt, and pepper in a bowl for the slaw.
  5. Slice slider buns and pile pulled jackfruit on the bottom half. Top with cranberry slaw and cap with the bun tops.
