  • 1 medium yellow onion, chopped
  • 4 garlic cloves, minced
  • 1/2 cup freshly squeezed orange juice
  • 2 tsp ground cumin
  • 2 tsp chili powder
  • 2 bay leaves
  • Salt and pepper to taste
  • Juice of 1 lime

Instructions

  1. Season pork shoulder chunks generously with salt and pepper.
  2. Set the Instant Pot to sauté mode; heat oil and cook onions until translucent (about 5 minutes).
  3. Stir in garlic, cumin, chili powder, and bay leaves; sauté for 30 seconds.
  4. Add orange juice and seasoned pork; close the lid securely.
  5. Pressure cook on high for 60 minutes; allow natural release for 15 minutes before quick release.
  6. Transfer pork to a baking sheet, shred using two forks, and broil on high for 5-7 minutes until crispy.
  7. Drizzle lime juice over shredded carnitas before serving.
