  • 2 tbsp olive oil
  • 2 tsp fresh thyme, chopped
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Preheat oven to 400°F (200°C). Lightly grease a baking dish.
  2. Season chicken breasts with salt and pepper and place in the prepared dish.
  3. In a medium pot, heat olive oil over medium heat. Sauté chopped onion until translucent (about 5 minutes).
  4. Add minced garlic and sliced mushrooms; cook until mushrooms soften (about 5-7 minutes).
  5. Stir in wild rice and add chicken broth. Bring to a boil, then reduce heat to low and cover. Simmer for about 45 minutes or until rice is tender.
  6. Roast chicken in the preheated oven for approximately 25-30 minutes until it reaches an internal temperature of 165°F (75°C).
  7. Fluff the wild rice pilaf with a fork and mix in thyme and parsley before serving. Plate sliced chicken on top of the pilaf.
