Ingredients

  • 2 cups cooked turkey, shredded
  • 1 cup frozen mixed vegetables (peas and carrots)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 cups low-sodium chicken broth
  • 2 sheets puff pastry
  • 1/4 cup flour
  • 1 tsp thyme (fresh or dried)
  • 1 tsp rosemary (fresh or dried)
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat the oven to 400°F (200°C) and prepare a baking dish with nonstick spray.
  2. In a skillet over medium heat, heat olive oil and sauté the diced onion for about five minutes until translucent. Add minced garlic and sauté for another minute.
  3. Sprinkle flour over the onion and garlic; stir for two minutes. Gradually whisk in chicken broth along with thyme, rosemary, salt, and pepper. Simmer until thickened (approximately five minutes).
  4. Stir in shredded turkey and mixed vegetables until well combined; heat through for three minutes.
  5. Transfer the mixture to the baking dish, cover with puff pastry, sealing edges gently. Cut slits in the pastry for steam escape.
  6. Bake for 25-30 minutes until the pastry is golden brown. Let cool slightly before serving.
