Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a medium bowl, whisk together flour, sugar, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, beat eggs with oil and vanilla until smooth.
  4. Fold in grated carrots and walnuts (if using) into the wet mixture.
  5. Gradually add dry ingredients to the wet mixture until just combined; do not overmix.
  6. Pour batter into the prepared pan and spread evenly.
  7. Bake for 30–35 minutes or until a toothpick inserted in the center comes out clean.
  8. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
