  • 1 cup long-grain rice (jasmine or basmati)
  • 4 garlic cloves (minced)
  • 2 cups low-sodium chicken broth
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and spray a large baking dish with nonstick cooking spray.
  2. In a bowl, coat the chicken legs with olive oil, salt, pepper, minced garlic, and dried herbs.
  3. In another bowl, mix the rice with chicken broth, adding salt and pepper. Pour into the prepared baking dish.
  4. Place seasoned chicken legs on top of the rice mixture.
  5. Cover with aluminum foil and bake for about 40 minutes until the chicken reaches an internal temperature of 165°F (74°C).
  6. Remove foil during the last ten minutes to crisp up the chicken skin.
