Instructions

  1. Prepare the fresh corn by removing the kernels from the cobs and rinsing them under cold water.
  2. In a large bowl, whisk together flour, baking powder, salt, and pepper until well combined.
  3. Fold in the eggs until the mixture is smooth and thick yet pourable.
  4. Gently add in the corn kernels and chopped green onions, being careful not to overmix.
  5. Heat oil in a heavy skillet over medium heat until hot (around 350°F).
  6. Drop spoonfuls of batter into the hot oil, frying for about 3-4 minutes on each side until golden brown.
