Ingredients

Scale
  • 2 cups chopped leeks (about 2 medium leeks)
  • 4 cups diced Yukon Gold potatoes (about 4 medium potatoes)
  • 4 tablespoons unsalted butter
  • 4 cups low-sodium vegetable broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh thyme or chives for garnish (optional)

Instructions

  1. Prepare the leeks by washing thoroughly and chopping into thin rings. Dice the potatoes into uniform cubes.
  2. In a large pot over medium heat, melt butter until foamy. Add leeks and sauté for about 5 minutes until soft.
  3. Add diced potatoes and vegetable broth; bring to a boil then reduce heat to simmer for 15-20 minutes until potatoes are tender.
  4. Using an immersion blender, puree the soup until smooth. If using a countertop blender, be cautious as the mixture will be hot.
  5. Stir in heavy cream gradually, seasoning with salt and pepper to taste. Optionally, garnish with fresh herbs before serving.
