  • 1 medium onion, diced
  • 2 medium carrots, chopped
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 1 medium zucchini, diced
  • 1 can (14.5 oz) diced tomatoes with juice
  • 4 cups low-sodium vegetable broth
  • 1 cup ditalini pasta (or small shells)
  • 1 can (15 oz) cannellini or kidney beans, rinsed and drained
  • 2 cups fresh spinach or kale
  • 2 tsp Italian seasoning
  • Salt & pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onions and sauté until translucent.
  2. Stir in carrots and celery; cook for about five minutes until softened.
  3. Add minced garlic and sauté for an additional minute until fragrant.
  4. Pour in diced tomatoes and vegetable broth; bring to a simmer.
  5. Add ditalini pasta and Italian seasoning; cook according to package instructions until al dente (about 8–10 minutes).
  6. Fold in rinsed beans and fresh greens; cook until warmed through.
  7. Season with salt and pepper to taste before serving.
