  • 3 cloves fresh garlic, minced
  • 8 ounces fettuccine or penne pasta
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 1 cup low-sodium chicken broth
  • 1 red bell pepper, diced
  • 1 medium onion, finely chopped
  • 2 tablespoons Cajun seasoning
  • Salt and pepper to taste

Instructions

  1. Gather all ingredients and chop the red bell pepper and onion.
  2. Heat olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper; cook for about five minutes on each side until golden brown. Remove from the skillet and set aside.
  3. In the same skillet, add more oil if necessary, then sauté the onion and red bell pepper until soft (about three minutes).
  4. Pour in chicken broth and heavy cream; stir in Cajun seasoning. Bring to a simmer and add grated Parmesan cheese until melted.
