  • 4 cups low-sodium chicken broth
  • 1 medium carrot, diced
  • 1 stalk celery, diced
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions, carrots, and celery; sauté until onions are translucent.
