  • 1 cup low-sodium chicken broth
  • 2 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C) and spray a large baking dish with nonstick cooking spray.
  2. In a skillet over medium heat, add olive oil and cook the chicken breasts until golden brown (about 5-7 minutes per side). Remove from skillet and chop into bite-sized pieces.
  3. Sauté the chopped onion, carrots, and celery in the same skillet until softened (about 5 minutes).
  4. In a bowl, mix the cream of mushroom soup with chicken broth and garlic powder until well combined.
  5. In the prepared baking dish, combine cooked wild rice, sautéed veggies, and chopped chicken. Pour sauce over mixture and stir gently.
  6. Cover with foil and bake for 40 minutes. Remove foil and bake for an additional 10-15 minutes until bubbly.
