  • 1 tbsp sesame oil
  • 3 cloves garlic (minced)
  • 1 tsp ginger (grated)

Instructions

  1. Prepare your rice by cooking jasmine rice according to package instructions. Let it cool completely.
  2. In a large skillet over medium heat, add sesame oil and sauté garlic and ginger for about 1 minute until fragrant.
  3. Add mixed vegetables and lightly beaten eggs; stir continuously for 3–4 minutes until eggs are scrambled and veggies are tender.
  4. Drizzle in soy sauce and Sriracha; mix until everything is evenly coated.
  5. Gently fold in the cooled jasmine rice and cook until heated through, about 5 minutes.
  6. Mix in sliced green onions just before serving.
